Market activity in the slaughter cattle sector is subject to strong fluctuations due to the constant change in supply and demand. In addition, there are a large number of suppliers and buyers, which makes it very difficult to gain an overview of the market. In order to ensure market transparency nevertheless, there is the instrument of official price quotation.

The Giessen Regional Council uses the price reports submitted by the slaughterhouses to determine the price ranges for the respective categories and trade classes for the previous week from Monday to Sunday. These are then published as an official price quotation together with the average weighted payout price calculated for the respective trade class.

Reports are made for the previous week:

  • The total quantity slaughtered by number of heads and carcass weight and
  • the weighted averages of the payout prices per kilogram (this is the price to be paid to the supplier free on arrival at the slaughterhouse, excluding VAT).

in the following subdivision:

  • for cattle according to the legal categories and trade classes for cattle carcasses,
  • for pigs according to the legal trade categories for pig carcasses and
  • for sheep according to the legal categories for sheep carcasses.

The reporting obligation applies in principle to carcasses of cattle, pigs and sheep.

Exception: businesses that slaughter no more than an average of 200 pigs or 75 cattle or 75 sheep per week. The average weekly number of carcasses is calculated on the basis of the quantity slaughtered in the previous calendar year.

The reports must be submitted to the Giessen Regional Council, Dec. 51.3, electronically or by fax using the prescribed form by 10:00 a.m. on Tuesdays at the latest.

Note: The owner of the slaughterhouse is obliged to keep the documents on the price declarations for 2 years. The period begins at the end of the year in which the respective animal was slaughtered.

Hinweise

The Giessen Regional Council prepares the "Weekly report on the price determination of carcasses" on the basis of the notifications received and sends it to the Federal Office for Agriculture and Food. The Federal Institute summarizes the reports received from the federal states and publishes the results on the Internet at www.bmelv-statistik.de.

The official price determination of slaughter cattle prices for Hessen can be found on the website of the Landesbetrieb Landwirtschaft Hessen (LLH) under Landwirtschaft/Markt & Management/Erzeugnisse der Tierproduktion. The official price determination for Hesse is also published in various trade journals and internet portals.
