Egg packing centers may only place their products on the market if they are approved under hygiene law in accordance with Article 4 (2) of Regulation (EC) No. 853/20044 . They are subject to Regulation (EC) No. 852/20043 on the hygiene of foodstuffs and Regulation (EC) No. 853/20045 with specific hygiene regulations for foodstuffs of animal origin.

Youmayonly operate an egg packing station if it has been approved by thecompetentauthorityunder market law and has been issued a packing station identification number.
You may only operate an egg packing station if it has been approved by the competent authority under food law.
Egg packing centers are businesses that sort, mark, pack and/or repack eggs according to quality and weight classes. Egg packing centers may only be operated if they have been approved under market law by the competent authority upon application and have been assigned a packing center identification number.
If eggs are sold directly to the end consumer on the farm (production site), at the doorstep or at a public market and not according to quality and weight class, no approval as a packing center is required.
Direct marketers who market eggs via a trading partner (retailer, baker, kiosk, other direct marketer, etc.) or who wish to offer eggs sorted by size and quality class or who have a sales radius of more than 100 kilometers require approval as a packing centre.
In M-V, the market regulation permit is issued by the State Office for Agriculture, Food Safety and Fisheries in Rostock.
Approval under hygiene law is granted in M-V by the Ministry for Climate Protection, Agriculture, Rural Areas and the Environment M-V in Schwerin.

Only companies that have suitable premises and technical facilities for grading eggs according to quality and weight classes may be approved as packing centers.
Packing centers must have the following technical equipment necessary for the proper handling of eggs:
- an automatic or permanently manned candling unit / candling lamp that enables the quality inspection of individual eggs
- device(s) for determining the height of the air chamber
- a system for sorting the eggs by weight class
- one or more calibrated scales for weighing the eggs (note: accurate to 1 gram)
- Device(s) for marking eggs
The premises of the packing station and the technical equipment must be in good condition, clean and free of foreign odors.
Packing centers that work exclusively for the food and non-food industry are not required to have suitable technical equipment for sorting eggs by weight class.
The following is a non-exhaustive list of general requirements for food hygiene in egg packing centers:
- Design: Rooms and equipment must be planned and constructed in such a way that they can be easily cleaned, dirt accumulation is avoided, pests cannot enter and there are no damp walls or ceilings. They must be large enough so that there are sufficient work surfaces, the eggs can be stored appropriately and staff can work hygienically.
- Structural requirements: Floor coverings, walls, ceilings and window and door openings must be kept in perfect condition at all times; drainage systems must not spread odors and must be impenetrable to pests.
- Hygiene: The premises must be kept clean and in good repair at all times. Workers must wear clean protective clothing and maintain a high level of personal hygiene (hand wash basin with hot and cold water supply required).
You must apply to the competent body for approval as a packing station.
- The competent authority will examine your application and you will receive a written decision on the outcome.
- If your application is approved, the authority will provide you with the identification number that you need to label the egg packaging (packing center number).
The permit can be revoked at any time if the necessary requirements are no longer met.

- You submit the formal application to the State Office for Agriculture, Food Safety and Fisheries M-V in Rostock.
Eggsmustbe graded, labeled and, if necessary, packaged within ten days of laying.

Packagingmustbe clean, shockproof, dry and undamaged. The packaging material mustprotectthe eggs from foreign odors andpossiblequality deterioration.
Once the packing station has been approved, all marketing channels are open. The following listsmustbekept:
- Purchasing list (number of eggs purchased per producer)
- Sorting list (number of eggs per category per day)
- Sales list (number of eggs sold with place and date of sale)
