Would you like to operate an egg packing station? First, apply to the relevant authority for a market permit and a packing station code.
Egg packing stations are companies that sort, label, pack or repack eggs according to quality and weight classes. Only packing stations are allowed to sort eggs according to quality and weight classes.
You can only operate an egg packing station if the competent authority has, upon your application, approved the egg packing station under market law, veterinary law and, where applicable, hygiene law and you have received a packing station code and, where applicable, an identification mark.
You need a licence as a packing centre if you are a direct marketing company
- Market eggs through trading partners (e.g. retail, bakery, kiosk)
- want to offer eggs sorted by size and quality
- have a sales radius of more than 100 kilometers.
A licence is not required if you sell eggs
- from the production site,
- at the front door or
- on a public market
directly to end consumers and not according to quality and weight classes.
- Your packing centre has the technical facilities necessary for the proper handling of eggs. These include, where appropriate:
- an automatic or permanently manned candling system or other suitable equipment that enables the quality control of individual eggs
- device for determining the air chamber height
- a system for sorting eggs according to weight classes
- one or more calibrated scales for weighing the eggs, which weigh to the nearest 1 gram
- Exception: Packing centres that work exclusively for the food and non-food industries do not have to have suitable technical facilities for sorting eggs according to weight classes.

- The premises of your packing station and the technical facilities are in good condition and are clean and free of foreign odors.
- You submit your application to the responsible authority.
- The responsible authority will examine your application and, if necessary, request any missing information or documents from you.
- After a positive review, you will receive approval and be assigned a packing station code.
Once the packing station has been approved, all marketing channels are open to you. You must maintain the following lists:
- Purchase list: Number of purchased eggs per producer
- Sorting list: Number of eggs per category per day
- Sales list: number of eggs sold with place and date of sale
You must keep the lists for 12 months.
- Egg packing stations: Companies that sort, label and pack or repack eggs according to quality and weight classes.
- Only packing stations are allowed to sort eggs according to quality and weight classes.
- Prerequisites for operating a packing station:
- market approval
- veterinary approval
- hygiene approval
- Assignment of a packing station code and, if applicable, identity code
- Authorization required for:
- Marketing through trading partners (e.g. retail, bakery, kiosk).
- Offer of eggs sorted by size and quality.
- Sales radius of more than 100 kilometers.
- No approval required for direct marketing:
- Delivery from the production site.
- door-to-door sales.
- Sale on public markets without sorting according to quality and weight classes.
